Happiness is… Freshly baked muffins!
Ok, maybe it’s not the only key to happiness, but it sure helps sometimes!
Sometimes your inspiration for making is finding that right recipe or having a craving for something. But sometimes it simply comes from having items in the kitchen that need to get used up, before you end up having to throw them away.
This is exactly where today’s recipe inspiration came from. I realize this morning that I had some VERY overripe bananas sitting on the counter. They needed to be made into something. But what? I just made Banana Bread last week. Then I realized that we also had a surplus of Oatmeal in the house (On a few occasions, I accidentally bought regular “Old Fashioned” Oats instead of the “Quick” variety that are usually eaten 5 mornings a week in my house. So I was on a mission. Find a recipe that would use both that would also be healthy and not full of sugar.
Coffee mug in hand, I sat down to do some research. It didn’t take long and I came across the perfect recipe! NO FLOUR, SUGAR FREE, OIL FREE HEALTHY OATMEAL MUFFINS on Brendid.com (full recipe here!). It was perfect! Bren also has tons of other yummy recipes on her site, so I am sure that I will be back there to try more.
Now keep in mind that I didn’t follow her recipe exactly (when do I ever do that??) but this time I was pretty close. Her recipe called for Gluten Free Oats. Yup, I used regular ones. Her recipe called for Milk – I used Coconut milk. that was it! Everything else was kept the same. I did follow her suggestion and added some craisins to the batter before I baked also.
2 ½ cups old-fashioned oats ( 1.5 cups ground, 1 cup whole)
2 Tbsp old-fashioned oats for muffin tops
2-3 large overripe bananas (1 cup mashed or or 1 cup applesauce)
2 large eggs lightly beaten
1/3 cup honey
3/4 cup milk
2 tsp real vanilla
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
These were awesome!
I will also note that she didn’t really say how much batter to put into each muffin cup. For those of you looking for an exact measure, I went with about 1/4 cup and ended up with 18 muffins… I guess I could have filled them a little more. (she said 1 batch would equal about 14 muffins). Next time, I’ll go with 1/3 of batter in each so that I can get a little bigger muffin!
Fresh out of the oven deliciousness! Too bad no one else was home to enjoy the moment with me. They will have to wait til later to try them! (unless I’ve eaten them all before they get home!
